Directions

  1. Set a medium-sized pot of salted water to boil.
  2. Combine salt, chili powder, onion powder, cumin, cayenne and black pepper in a small bowl.
  3. Add the oil in a large skillet and set to medium-high heat.
  4. Add chicken breasts to the hot skillet and sprinkle with seasoning mixture. Cook until no longer pink, 8-9 minutes.
  5. Remove the chicken breasts and cut into 1-inch cubes
  6. In the skillet, add the onion and garlic, heat for a minute until you smell the garlic.
  7. Add the green chilies, corn and black beans, cilantro, and salsa.
  8. Add the cubed chicken, bring to a boil, and simmer on medium heat for 10 minutes.
  9. While simmering the meat, cook the pasta in the pot, cook until al dente according to package instructions.
  10. Drain the pasta, return it to the pot, and add cheddar cheese; stir to combine.
  11. Add the chicken, stir to combine.
  12. Serve.  Top with fat free sour cream, if desired.
