Pork Fried Rice

Directions

  1. Make the rice and ensure it is cool (use 2 cups water and the appropriate amount of rice) - this can be made the day before and refrigerated or just before starting the pork and let it cool while the pork is cooking
  2. Preheat the oven to 350 degrees
  3. Season the pork tenderloin with salt, pepper, and garlic powder
  4. Sear the pork tenderloin on all sides (about 1 to 2 minutes per side)
  5. Put approximately ¼ cup soy sauce and ¼ cup water in the bottom of a 8x12 baking dish
  6. Transfer the pork tenderloin to the baking dish and coat all sides with the soy sauce
  7. Bake in the oven until an internal temperature of 145 degrees (about 30 minutes)
  8. Grate the carrots (largest grating opening)
  9. Dice the onion
  10. Microwave the egg whites - 30 sec, stir, then another 30 sec
  11. Microwave the egg substitute - 30 sec, stir, then another 30 sec
  12. In a bowl combine the egg whites and egg substitute and mash with a fork until small pieces
  13. Microwave the peas for 1 minute to thaw
  14. Mix the soy sauce, oyster sauce, and sesame oil in a small bowl
  15. Remove the pork from the oven and let sit 5 minutes, then dice to ¾-inch cubes (I usually let it sit while cooking the vegetables and dice it while heating the rice mixture to serving temperature)
  16. Melt the margarine in a pan (I prefer a high-walled stir-fry pan)
  17. Cook the carrots and onion until slightly tender (about 3 minutes)
  18. Add the peas to heat them up (about 1 minute)
  19. Add the garlic and cook until they are aromatic (about 30 seconds)
  20. Add the rice, mix, and bring everything to serving temperature, stirring occasionally
  21. Add the soy sauce, oyster sauce, sesame oil mixture and mix thoroughly
  22. Add the egg and mix thoroughly
  23. Add the pork, mix, heat, and serve
