Directions
- Make the rice and ensure it is cool (use 2 cups water and the appropriate amount of rice) - this can be made the day before and refrigerated or just before starting the pork and let it cool while the pork is cooking
- Preheat the oven to 350 degrees
- Season the pork tenderloin with salt, pepper, and garlic powder
- Sear the pork tenderloin on all sides (about 1 to 2 minutes per side)
- Put approximately ¼ cup soy sauce and ¼ cup water in the bottom of a 8x12 baking dish
- Transfer the pork tenderloin to the baking dish and coat all sides with the soy sauce
- Bake in the oven until an internal temperature of 145 degrees (about 30 minutes)
- Grate the carrots (largest grating opening)
- Dice the onion
- Microwave the egg whites - 30 sec, stir, then another 30 sec
- Microwave the egg substitute - 30 sec, stir, then another 30 sec
- In a bowl combine the egg whites and egg substitute and mash with a fork until small pieces
- Microwave the peas for 1 minute to thaw
- Mix the soy sauce, oyster sauce, and sesame oil in a small bowl
- Remove the pork from the oven and let sit 5 minutes, then dice to ¾-inch cubes (I usually let it sit while cooking the vegetables and dice it while heating the rice mixture to serving temperature)
- Melt the margarine in a pan (I prefer a high-walled stir-fry pan)
- Cook the carrots and onion until slightly tender (about 3 minutes)
- Add the peas to heat them up (about 1 minute)
- Add the garlic and cook until they are aromatic (about 30 seconds)
- Add the rice, mix, and bring everything to serving temperature, stirring occasionally
- Add the soy sauce, oyster sauce, sesame oil mixture and mix thoroughly
- Add the egg and mix thoroughly
- Add the pork, mix, heat, and serve
