Directions

  1. Cook the chicken in a skillet until it releases the water stored in it. Set aside.
  2. Saute onion and bell pepper in a large skillet coated with cooking spray over medium-high heat until tender.
  3. Stir in chicken and next 6 ingredients; heat until warm, remove from heat.
  4. Tear tortillas into 1-inch pieces; layer one-third tortilla pieces in bottom of a 12 x 9-inch baking dish coated with cooking spray.
  5. Top with one-third chicken mixture and one-third cheese. Repeat layers twice.
  6. Bake at 350 degrees for 30 to 35 minutes or until bubbly.
