Trim all visible fat from the pork and cut the pork into 1-inch portions.
Put the pork into a food processor and add the other ingredients.
Process until the pork is ground.

If using it as a topping on pizza, use the 1/8 tsp measure as a scoop. Pull out a heaping measure and put on the pizza. You may have to use your thumb to roll the sausage off the measure. It will cook as the pizza cooks (minimum 25 minutes).
This is a good lean meat to use as a pizza topping.
