Directions
- Diagonal cut the pork loin into oblong medallions about 1/2 inch thick
- Put the bread crumbs, egg whites, and corn starch in separate bowls
- Dredge the medallions in the corn starch, then egg whites, then bread crumbs
- Spray a pan with the cooking spray and cook the medallions on medium high
